Make ahead / storage: The cooked filling keeps in an airtight container in the fridge for up to 3 days and reheats well in a pan or microwave.

Four lettuce cups filled with pork mince, carrot and water chestnut topped with coriander, spring onion and fried shallots

San choy bow is pork mince cooked with a handful of aromatics and finished with a slightly sweet, savoury sauce, then spooned into cold lettuce cups so you get a hot, savoury filling against a cold, crunchy wrapper. That contrast is most of the appeal, so it's worth keeping the lettuce properly chilled right up until serving.

Water chestnuts go in right at the end rather than with everything else. They're already cooked and only need enough time in the pan to warm through, any longer and they lose the crunch that's the whole point of including them. The same goes for the final splash of sesame oil, stirred through off the heat so it stays fragrant instead of cooking off.

Iceberg lettuce is the right choice here over a softer lettuce. Its leaves naturally curl into a cup shape and hold their crunch even once a hot, slightly saucy filling is spooned in, where a leaf like cos would wilt and tear.

This is a fast dinner for a warm night, the kind where you don't want the oven on and you want to eat within half an hour of walking in the door. Make extra filling if you're feeding a crowd, since people tend to come back for a second or third cup once they start building their own.

Method

  1. Step 1: Trim the core from the lettuce, rinse under cold water, then wrap in a clean tea towel and refrigerate while you cook the filling, this keeps the leaves cold and crisp for serving.

  2. Step 2: Heat the oil in a wok or large frying pan over high heat. Add the pork mince and cook, breaking it up with a wooden spoon, until browned, about 4-5 minutes.

  3. Step 3: Add the garlic, ginger, carrot and the white parts of the spring onion. Stir-fry for 2 minutes, until the carrot softens slightly.

  4. Step 4: Add the oyster sauce, soy sauce and stock, and simmer for 2-3 minutes, until the liquid reduces slightly and coats the pork.

  5. Step 5: Stir in the water chestnuts and cook for 1 minute, just long enough to heat through.

Tip: Add the water chestnuts last and keep them in the pan for a minute at most, any longer and they go soft instead of staying crunchy.

  6. Step 6: Take off the heat and stir through the sesame oil and the green parts of the spring onion.

  7. Step 7: Spoon the warm filling into the chilled lettuce cups. Scatter with fried shallots or crushed peanuts and coriander leaves, and serve straight away.

Tips

  • Dice the water chestnuts finely rather than leaving them in larger pieces, smaller pieces distribute more evenly through the filling and are easier to eat in a lettuce cup.
  • Chill the lettuce cups properly before filling. A warm or room-temperature lettuce cup goes limp fast under a hot filling.
  • Serve the filling in a bowl at the table and let people build their own cups, it stays warmer for longer than if you fill all the cups ahead of time.

Variations

  • Chicken version: swap the pork mince for chicken mince, the cooking time and method stay the same.
  • Vegetarian: swap the pork for a mix of finely diced mushrooms and extra-firm tofu, crumbled, and use a vegetarian oyster sauce.
  • Gluten-free: use a gluten-free soy sauce and check your oyster sauce brand, some contain wheat.

Storage and make-ahead

The cooked filling keeps in an airtight container in the fridge for up to 3 days and reheats well in a pan or microwave. Lettuce cups don't keep once filled, assemble them fresh just before eating.
