I can still remember the first time I encountered a bacon weave breakfast sandwich. I was visiting my friend Jenny in Chicago. It was one of those crisp autumn mornings when the leaves are just starting to turn, and there's a chill in the air that makes you want to stay inside with a hot cup of coffee. Jenny is one of those people who always knows the latest food trends, so when she said she had something special planned for breakfast, I knew I was in for a treat. As I walked into her kitchen, the smell of sizzling bacon greeted me like an old friend, and I was immediately intrigued by the latticework of bacon strips she was carefully crafting.

It seemed both indulgent and clever, exactly the kind of thing you’d expect from a city known for its food scene. That morning, we sat at her small kitchen table, with the city bustling beyond the windows and a hearty breakfast in front of us. Jenny sheepishly admitted that she’d found the idea online but put her own spin on it. The moment I took a bite, I was hooked. It was rich and savory, with the right amount of crunch, and I knew I needed to learn how to make it myself.

Eating that sandwich felt like a little celebration of friendship and good food, a memory I relish every time I recreate the dish in my own kitchen. This bacon weave breakfast sandwich is ideal for a lazy weekend brunch, especially when you’re looking to impress someone or simply want to treat yourself. Imagine one of those slow weekends where pajamas are the dress code and lounging is on the agenda. The kind where you start your day without a care in the world, coffee in hand and music softly playing in the background. This sandwich fits right into that picture.

It’s not something you whip up every morning, but it's a rewarding project when you have a bit of extra time and want to savor something a little different. The beauty of this sandwich is in the blend of flavors and textures. Each bite offers a symphony of sensations, from the buttery softness of the eggs to the satisfying crunch of the hash brown patties. Let’s not forget the star of the show, the bacon weave. The bacon provides a smoky, salty punch that’s balanced out by the sharp cheddar, which melts perfectly over the warm layers.

Then you’ve got the fresh juiciness of the tomato slices, which add a refreshing contrast to the richness of the other components. Each ingredient plays its part, creating a balanced meal that feels both indulgent and familiar. The bacon weave itself is truly an adventure in texture. When you weave those halved strips of bacon together and cook them to crispy perfection, it forms a delicious crust that holds everything else in place. There's something incredibly satisfying about breaking through that crispy exterior to uncover the layers beneath.

The weave technique isn’t just about presentation, although it certainly looks impressive. It’s also about creating a structure that evenly distributes the bacon, ensuring you get a bit of that beloved flavor in each and every bite. Here are some tips I’ve learned along the way to make your cooking experience smoother. First, make sure your bacon strips are of uniform thickness.

This will help them cook evenly and prevent some strips from burning while others remain undercooked. When you're weaving, it helps to have a bit of patience and a steady hand. Don’t worry if it looks a bit messy at first, practice makes perfect. For your eggs, I recommend cooking them low and slow to achieve a creamy scramble, which contrasts nicely with the crispy elements of the sandwich. When cooking the hash browns, make sure to follow the package instructions for best results, as this ensures they’re crispy on the outside and soft on the inside.

A little background on this dish: it’s a modern take on the classic American breakfast sandwich. While the traditional bacon, egg, and cheese has been a staple for many, the bacon weave variation has gained popularity thanks to food bloggers and social media, where people are always looking for ways to reinvent classics. The weave technique adds a visual appeal and a whole new layer of flavor, turning a simple sandwich into something that feels special. It’s the kind of dish that makes you appreciate the creativity involved in home cooking. In the end, what makes this breakfast sandwich so enjoyable is both its simplicity and its sophistication.

It’s a dish that encourages you to slow down, enjoy the process, and savor the result. Whether it reminds you of a special morning shared with friends or simply provides a delicious start to your day, it’s a recipe worth adding to your brunch repertoire. So next time you find yourself with a little extra time and a craving for something hearty, give this bacon weave breakfast sandwich a try. It might just become a new favorite in your kitchen too.

Method

  1. Step 1: Arrange a rack in center of oven; preheat to 425°. On a foil-lined baking sheet, arrange 3 bacon halves side by side to form a square shape. Fold up the 2 outer slices in half, Then place another bacon piece on top of the middle piece horizontally. Fold back the outer slices. Fold up the middle slice and place another piece down horizontally. Fold back the middle slice. Fold back the outer slices and place the last piece over the middle slice. Each bacon weave should consist of 6 bacon halves. Repeat to make 4 bacon weaves total.

  2. Step 2: Bake bacon until just crispy, 25 to 35 minutes. Transfer to a paper towel-lined baking sheet to drain.

  3. Step 3: Meanwhile, in a medium nonstick skillet over medium heat, melt 1 tsp. butter. Working one at a time, fry egg until white is set and yolk is slightly runny, about 3 minutes; season with salt and pepper. For more fully cooked egg, baste hot butter from pan on top of yolk to help yolk firm up. Place a cheese slice on top of egg. Cover pan and cook until cheese is melted, about 30 seconds. Transfer to a plate. Repeat with remaining 1 tsp. butter, 1 egg, salt, pepper, and 1 cheese slice.

  4. Step 4: To assemble, place 1 tomato slice each on 2 bacon weaves. Top both with a hash brown and a cheesy fried egg. Close each sandwich with a second bacon weave. Serve with hot sauce alongside (if using).
