Chicken enchiladas baked under browned, bubbling cheese in a white baking dish with a serving spatula

These enchiladas use a filling of spiced shredded chicken, corn, green chiles and chipotle, rolled in corn tortillas and baked in red enchilada sauce. The chipotle gives a smoky heat that runs through the whole dish, so a little goes a long way.

The main thing that stops corn tortillas from cracking is warmth. Cold tortillas split as soon as you roll them. Warm them in a stack, wrapped in a damp towel, in the microwave, then dip each one briefly in the sauce before filling. They become soft and flexible and soak up flavour as they bake.

Chicken thighs stay juicier than breasts here, but either works. You can also use 4 cups of leftover or rotisserie chicken and skip the first step.

The recipe fills two 9x13-inch dishes, enough for a crowd or one dinner plus a tray for the freezer. Serve with Mexican rice, refried beans, and a bowl of sour cream and chopped cilantro.

Method

  1. Step 1: Heat the oven to 375°F (190°C). Season the chicken all over with the salt, pepper, cumin, garlic powder and chili powder.

  2. Step 2: Heat the oil in a large skillet over medium-high heat. Cook the chicken until browned on both sides and cooked through, 5 to 7 minutes per side depending on thickness. Transfer to a board and let it rest for 5 minutes.

  3. Step 3: Lower the heat to medium and add the onion to the same pan. Cook in the chicken fat until soft, about 5 minutes, then add the garlic for 30 seconds. Stir in the corn, green chiles, chipotle and drained tomatoes and cook for 3 minutes, until most of the liquid has evaporated.

  4. Step 4: Shred the chicken with two forks and stir it into the pan. Take it off the heat and taste for salt.

  5. Step 5: Spread 1/2 cup of enchilada sauce over the bottom of each of two 9x13-inch baking dishes. Wrap the tortillas in a damp kitchen towel and microwave for 45 to 60 seconds, until soft and warm.

Tip: Work with a few tortillas at a time and keep the rest wrapped so they stay soft.

  6. Step 6: Pour the remaining sauce into a shallow bowl. Dip a tortilla in the sauce, lay it flat, add about 1/4 cup filling along the middle and roll it up. Place it seam side down in a dish. Repeat, fitting 8 in each dish.

  7. Step 7: Spoon any leftover sauce over the top and scatter on the cheese. Bake for 18 to 20 minutes, until the cheese has melted and the sauce is bubbling at the edges. Rest for 5 minutes, then top with cilantro, scallions and sour cream.

Tips

  • Use mild chipotles or just one if you are cooking for kids. Adobo sauce is hot.
  • A dry filling keeps the tortillas from going mushy, so let the tomato liquid cook off in step 3.
  • Store-bought enchilada sauce varies in salt, so taste the filling before you add extra.

Variations

  • Green enchiladas: swap the red sauce for salsa verde and use Monterey Jack only.
  • Leftover chicken: skip steps 1 and 2 and stir 4 cups of shredded cooked chicken into the vegetables.

Storage and make-ahead

Leftovers keep in the fridge for up to 4 days. To make ahead, assemble without the cheese, cover and refrigerate for up to a day, then add the cheese and bake for 25 to 30 minutes. Unbaked trays freeze for up to 3 months. Thaw overnight before baking.
