Grilled chicken satay skewers with a bowl of peanut sauce and lime wedges on a white plate

Chicken thigh is the right cut for skewers over breast, it has enough fat running through it to stay juicy over the high, direct heat a barbecue needs for good char, where breast tends to dry out and turn stringy in the same time.

The marinade here is short on purpose. Thirty minutes is enough to get flavour into the surface of the meat, there's no need to leave it overnight unless it suits your schedule better, an hour or two in the fridge won't hurt it either.

The satay sauce is simmered rather than just stirred together cold, which thickens it slightly and lets the peanut butter, coconut milk and spices combine properly instead of tasting like separate ingredients sitting next to each other. It will keep thickening as it cools, so loosen it with a splash of water or extra coconut milk just before serving if it's gone stiff.

Cut the chicken into pieces of a similar size so they cook through at the same rate, and don't crowd the skewers, a few millimetres of gap between pieces lets the heat get around each one and gives you proper char instead of steamed, pale chicken.

Method

  1. Step 1: Combine the chicken, soy sauce, curry powder, garlic, ginger, brown sugar and oil in a bowl. Mix well, cover and refrigerate for at least 30 minutes, or up to overnight.

  2. Step 2: Thread the marinated chicken onto the soaked skewers, leaving a small gap between pieces so the heat can get around each one.

  3. Step 3: For the satay sauce, combine the peanut butter, coconut milk, soy sauce, brown sugar, lime juice, garlic, sambal oelek and water in a small saucepan. Whisk over medium-low heat for 3-4 minutes, until smooth and glossy.

Tip: The sauce thickens further as it cools. Keep a little extra water or coconut milk handy to loosen it just before serving.

  4. Step 4: Heat the barbecue flat plate or a grill pan to high. Cook the skewers for 3-4 minutes each side, turning once, until charred in spots and cooked through.

  5. Step 5: Rest the skewers for a couple of minutes, then serve with the warm satay sauce and lime wedges.

Tips

  • Cut the chicken into pieces of a similar size. Uneven cubes mean the smaller ones overcook while the larger ones are still pink in the middle.
  • Soak bamboo skewers for a full 30 minutes, not a quick dunk, or the exposed ends will char and catch before the chicken is done.
  • If the satay sauce splits slightly as it simmers, whisk in a tablespoon of water off the heat to bring it back together.

Variations

  • Gluten-free: use tamari in place of soy sauce in both the marinade and the sauce.
  • Different protein: pork shoulder strips or firm tofu cubes both work with the same marinade and timing (reduce tofu cooking time slightly).
  • Spicier: double the sambal oelek in the sauce, or add a finely sliced fresh chilli to the marinade.

Storage and make-ahead

Satay sauce keeps in an airtight container in the fridge for up to 5 days, thin with a splash of water when reheating. Cooked skewers keep for 2 days in the fridge and reheat well in a hot pan or under the grill for a couple of minutes a side.
