Two prawn cocktails in small glasses with shredded lettuce, cucumber, prawns, Marie Rose sauce, dill and lemon wedges

Prawn cocktail earns its spot on the Christmas table because it needs no oven and no stovetop, which matters when the rest of the kitchen is already busy with a roast or a ham. Buy your prawns already cooked and peeled from the fishmonger if you can, it turns this into an assembly job rather than a cooking one.

The Marie Rose sauce is just mayonnaise and tomato sauce with a few extras for balance, but the ratio matters more than it looks. Too much tomato sauce and it tastes like a dip, too much mayonnaise and it's just creamy without any tang. A squeeze of lemon juice and a dash of Worcestershire sauce are what lift it from flat to properly savoury.

Iceberg lettuce, finely shredded, is the traditional base rather than a softer leaf, it stays crisp under the sauce instead of wilting while the glasses sit on the table. Build each serving in a small glass or cocktail glass if you want the classic look, though a wide-rimmed bowl works just as well if you're short on glassware.

Assemble these close to serving. The lettuce holds for an hour or two in the fridge once dressed, but it's at its best within the first half hour.

Method

  1. Step 1: Whisk the mayonnaise, tomato sauce, Worcestershire sauce, lemon juice and cayenne together in a small bowl until smooth and a pale pink colour. Season with salt and pepper to taste. Refrigerate while you prepare the rest.

  2. Step 2: Divide the shredded lettuce and diced cucumber among 6 small glasses or bowls, keeping the layer fairly compact.

  3. Step 3: Scatter the diced avocado, if using, over the lettuce, then arrange the prawns on top, reserving a few whole ones with tails on for garnish.

  4. Step 4: Spoon the Marie Rose sauce generously over each glass. Top with a reserved prawn, a sprig of dill or chives, and serve with lemon wedges on the side.

Tips

  • Pat the prawns dry with paper towel before assembling. Wet prawns water down the sauce and make the glasses look sloppy rather than clean.
  • Deseed the cucumber before dicing, the seeds and surrounding flesh are the wateriest part and can make the sauce weep.
  • Make the sauce up to a day ahead and keep it covered in the fridge, the flavour actually improves once it's had time to sit.

Variations

  • Dairy-free: use an egg-free mayonnaise, the rest of the sauce is unchanged.
  • Low-carb: skip the avocado and add extra cucumber and a few halved cherry tomatoes instead for the same freshness.
  • Spicier sauce: double the cayenne or add a dash of hot sauce for a bit more heat, good if the rest of the Christmas spread is on the mild side.

Storage and make-ahead

Best assembled just before serving. The sauce keeps in an airtight container in the fridge for up to 3 days. Once assembled, the glasses are best eaten within an hour or two, the lettuce softens and the prawns dry out if left much longer.
