Bowl of pale green cream of asparagus soup with a swirl of cream and asparagus tips

This is a good way to use a couple of cheap bunches of asparagus when it's at its best through spring. The soup gets its body from a classic butter-and-flour base rather than from cream alone, so it stays light while still coating the spoon properly.

Simmer the asparagus in stock first and blend it before you build the base. Cooking it separately like this keeps the colour bright and the flavour clean, rather than muddying it by boiling everything together from the start.

Cook the flour in the butter for a minute or two before adding any liquid. This gets rid of the raw, pasty taste that undercooked flour leaves behind and is the difference between a soup that tastes properly finished and one that tastes like it needed another five minutes.

Stir a spoonful of the hot soup into the sour cream before adding it back to the pot, rather than tipping cold sour cream straight in. This brings the two closer in temperature first, which stops the sour cream splitting into little curdled flecks. A squeeze of lemon juice at the end lifts the whole thing and keeps it from tasting flat.

Method

  1. Step 1: Combine the asparagus, half the chicken stock and the onion in a large saucepan. Cover and bring to the boil over high heat, then reduce to medium-low and simmer, uncovered, until the asparagus is tender, about 12 minutes.

  2. Step 2: Tip the mixture into a blender and blend until smooth. Set aside.

  3. Step 3: In the same saucepan, melt the butter over medium-low heat. Stir in the flour, salt and pepper and cook, stirring constantly, for 2 minutes to cook out the raw flour taste.

Tip: The mixture will look like a thick paste at this stage. That's correct, it loosens up once the stock goes in.

  4. Step 4: Increase the heat to medium and pour in the remaining stock, stirring constantly until the mixture comes to the boil and thickens slightly. Stir in the pureed asparagus and the milk.

  5. Step 5: Put the sour cream in a small bowl and stir in a ladleful of the hot soup to loosen it, then pour this back into the pot and stir in the lemon juice. Warm through gently without letting it boil, and serve immediately.

Tips

  • Save a few asparagus tips, blanched for a minute in the stock, to scatter over the finished soup for texture.
  • If the soup looks a bit thin after blending, simmer it uncovered for a few extra minutes before adding the milk, the liquid reduces and thickens as it cooks.

Variations

  • Dairy-free: use a dairy-free milk and swap the sour cream for a spoonful of dairy-free yoghurt stirred through at the end, or leave it out entirely.
  • Gluten-free: use a gluten-free plain flour blend for the roux, or substitute 1 tablespoon of cornflour mixed with a little cold water, added after the stock.

Storage and make-ahead

Keeps in the fridge for up to 3 days. Freezes well for up to 3 months, though it's best to add the sour cream after reheating from frozen rather than freezing it in, dairy can separate slightly on thawing. Reheat gently over low heat, stirring often.
