You know those evenings when you just want something simple yet special, a meal that feels like a warm hug at the end of a long day? Well, I’ve got just the thing. Whenever I whip up a plate of creamy salmon pasta, I’m reminded of cozy dinners spent with family, everyone gathered around the kitchen table with the smell of garlic and white wine wafting through the house. It always takes me back to this one evening when the weather was just starting to get chilly. We were all bundled inside after a day of raking leaves, cheeks flushed from the crisp air.

I remember my mom telling stories and dad laughing, the kind of memories that are tied to the comfort of good food and good company. Autumn seems like the perfect time for this dish. There’s something about the slight chill in the air that makes me crave something creamy and satisfying. Pasta has this way of making everything feel just a little bit cozier, and when you add salmon to the mix, it’s like you've hit the jackpot of comfort food. It’s also a lovely dish for a date night at home.

Nothing too fussy or grand, just a nice little meal for two that you can pair with a simple green salad and maybe a nice glass of wine. It’s also great for those nights when you want to treat yourself to something special without spending hours in the kitchen. The combination of salmon and pasta is a match made in heaven in my book. The richness of the salmon paired with the creamy sauce is just divine. The olive oil brings out the natural flavors of the salmon, while the garlic gives it that aromatic base that makes your kitchen smell like a dream.

And let's not forget about the white wine. It adds a depth of flavor, a slight tang that balances out the creaminess perfectly. The lemon zest and juice bring a fresh twist, cutting through the richness of the cream and keeping everything light and delightful. It's like every ingredient plays its part in this little symphony of flavors. Now, a couple of little kitchen tips I’ve picked up.

First off, when cooking the salmon, be gentle. You want it tender and flaky, not overcooked. I’ve found that giving it a quick sear on each side and then letting it finish cooking as you prepare the sauce works wonders. It keeps the salmon moist and full of flavor. Another thing, when you’re making the sauce, let the shallots or onions get a nice golden color before you add the wine.

This really brings out their sweetness and adds another layer of flavor to the dish. Take your time with this step. A bit of patience here goes a long way. As for the origins of this delightful dish, creamy pasta recipes are a staple in Italian cuisine, known for their simplicity and the way they let quality ingredients shine. The idea of pairing salmon with pasta might not be as traditional as some other combinations, but it’s become popular for a reason.

People love it for its luxurious feel and the way it satisfies both your taste buds and your hunger. It’s the kind of dish you’d find in a cozy Italian trattoria, something you’d order on a chilly evening to warm you up from the inside out. Over the years, it's made its way into home kitchens everywhere, including mine, as a go-to for a delicious, comforting meal that doesn't take hours to prepare. So here’s to those evenings when you want something that’s both simple and a little indulgent. This creamy salmon pasta fits the bill perfectly, giving you all the textures and flavors you crave in a comforting dish.

It’s the kind of meal that brings people together around the table, where you can relax, share stories, and just enjoy the moment. And honestly, isn't that what cooking at home is really all about?

Method

  1. Step 1: You can either steam or roast the salmon, depending if you want to turn the oven on or not. To roast, heat the oven to 200C/180C fan/gas 6, place on a baking tray, drizzle with oil and roast for 12 mins until opaque and the flesh starts to flake when pressed. To steam, place the fillets skin-side down in a steamer, and steam over a pan of simmering water for 8-10 mins until cooked.

  2. Step 2: While the salmon is cooking, boil the pasta for 10 mins until al dente, Then drain, reserving 6¾ tbsp of the pasta water.

  3. Step 3: Heat the oil on a medium heat in a wide frying pan and fry the shallot for 6 mins until softened, but not turning golden. Add the garlic and fry for a minute more until fragrant. Add the wine, bubble for a few minutes until reduced by half, Then add the cream and season well. Bring to a very gentle simmer.

  4. Step 4: Flake the cooked salmon into big chunky pieces, leaving the skin behind. Add to the sauce with the cooked pasta. Add the lemon zest, a squeeze of the juice and most of the dill. Add a splash of the pasta water to the sauce to coat the pasta if you need to. Toss gently to keep the salmon in big pieces. Check the seasoning, if using double cream you may need a squeeze more lemon juice. Grind over some black pepper and scatter over the remaining dill. Serve with a green salad.
