Every time I think about making fried chicken, I’m transported back to my grandma’s tiny kitchen, where the smell of sizzling oil and gently spiced flour was as comforting as her warm hugs. Grandma Lottie was the kind of cook who didn’t just follow recipes. She poured her heart into every meal, and her fried chicken was no exception. I remember sitting on a creaky wooden stool at the corner of her Formica-topped table, watching her with wide eyes as she worked her magic. She’d hum an old tune, something from her days in the church choir, while she patiently dipped each piece of chicken into the creamy buttermilk bath.

Then came the flour, seasoned just right with a pinch of this and a shake of that, her well-worn hands moving with practiced ease. That kitchen was a place of love, laughter, and some of the best meals I’ve ever had. It wasn’t just the food that made those afternoons special but the stories she told. Grandma would reminisce about feeding her brood of seven with that same fried chicken recipe, joking that with so many mouths to feed, she had to learn early on how to make a meal stretch. It was her go-to dish for Sunday dinners and holiday gatherings because it was the surefire way to bring everyone together.

I’ve tweaked her recipe a little over the years, adding a touch more paprika and a bit more salt to suit my taste, but the essence remains the same. Every time I make it, I feel like a piece of her is there in the kitchen with me, a reminder of the joy of sharing food with loved ones. Fried chicken is just one of those dishes that feels right all year round, but there's something about summer that makes it even more special. Think about a warm sunny day, maybe the Fourth of July, where the family gathers in the backyard. Picnic tables are set up, covered with red and white checkered cloths.

Kids are running around with sparklers, and the air is filled with laughter and the smell of grilled corn and fresh lemonade. That’s when fried chicken shines, piled high on a platter, crispy and golden, just waiting to be devoured. It’s this kind of meal that brings folks together, pulling everyone in for seconds and thirds. Plus, it’s just so portable. You can wrap it up and take it to a picnic or enjoy it right there on a lawn chair, the juice dripping down your fingers as you savor each crunchy bite.

The magic of this recipe lies in its ingredients and how they all work together to create something wonderful. The chicken, of course, is the star, but it's the supporting cast that makes it sing. The buttermilk acts as a tenderizer, soaking into the chicken and keeping it juicy even after it's fried to perfection. It also adds a subtle tangy flavor that pairs beautifully with the spices. Then there’s the flour, seasoned with paprika, a bit of sea salt, and freshly ground black pepper.

The paprika doesn't just bring flavor, it adds a subtle warmth and that classic deep color to the crust. When fried in hot vegetable oil, the flour crisps up, creating a crunchy outer shell that gives way to tender, flavorful meat inside. The texture is just as important as the taste. When you bite into a piece of well-made fried chicken, you should hear that unmistakable crunch. That’s the sign you’ve done it right.

Inside, the meat should be succulent and moist, thanks to the buttermilk marinade. The contrast between the crispy exterior and the tender interior is what makes fried chicken so irresistible. It’s a symphony of textures that keeps you coming back for more, each bite a delightful mix of crunch and juiciness. Making fried chicken at home can be a bit of an art, but there are a few tips that can ensure success. First, let the chicken marinate in the buttermilk for at least a couple of hours, or even overnight, to really lock in the moisture and flavor.

When it comes to breading, make sure the chicken is well-coated in the seasoned flour, giving it a good shake to remove any excess. This ensures an even crust. Also, use a deep frying pan or a heavy skillet and enough oil to cover the chicken pieces, but don’t overcrowd the pan. Fry in batches if you have to, so each piece cooks evenly. Lastly, let the cooked chicken rest on a wire rack instead of paper towels to keep that crunch intact.

Fried chicken has a history as rich as its flavor, with roots in Southern American cuisine. It’s a dish that has been passed down through generations, adapting and evolving with each new cook who makes it their own. Originally brought over by Scottish immigrants and then perfected by African American cooks, it has become a beloved staple of American comfort food. People make fried chicken because it’s not just a dish but a tradition, a way of bringing people together, sharing stories, and creating new memories with every crispy bite. Whether it’s a Sunday family dinner or a big celebration, fried chicken has a way of making every occasion feel special, creating bonds through the simple act of sharing a meal.

Method

  1. Step 1: Take your cut up chicken pieces and skin them if you prefer.

  2. Step 2: Place flour in a large plastic bag (let the amount of chicken you are cooking dictate the amount of flour you use). Season flour with paprika (which helps to brown the chicken), salt and pepper.

  3. Step 3: Dip chicken pieces in buttermilk Then a few at a time, transfer them into the bag with flour; seal the bag and shake to coat well.

  4. Step 4: Place the coated chicken on a cookie sheet or tray, and cover with a clean dish towel or waxed paper. LET SIT UNTIL THE FLOUR IS OF A PASTE-LIKE CONSISTENCY. THIS IS CRUCIAL!

  5. Step 5: Fill a large skillet (cast iron is best) about ⅓ to ½ full with vegetable oil. Heat until VERY hot.

  6. Step 6: Put in as many chicken pieces as the skillet can hold. Brown the chicken in HOT oil on both sides.

  7. Step 7: When browned, reduce heat and cover skillet; let cook for 30 minutes (the chicken will be cooked through but not crispy). Remove cover, raise heat again, and continue to fry until crispy.

  8. Step 8: Drain fried chicken on paper towels. Depending on how much chicken you have, you may have to fry in a few shifts. Keep the finished chicken in a slightly warm oven while preparing the rest.
