I remember the first time I made a grilled shrimp salad vividly. It was a summer evening, and I had some friends over for what was supposed to be a simple barbeque. My friend Amy, who is always on some new health kick, had requested something light but flavorful. I didn't want to just toss together a regular green salad, so I looked around my kitchen for inspiration. I had some shrimp in the freezer, and I thought, "Why not grill them and throw them on a salad?" I experimented a bit, and to my surprise, it turned out to be the star of the evening.

My friends were impressed, and I felt like a culinary genius. That's how this dish etched itself into my memory as a summer favorite. Each time I make it, I'm reminded of that warm evening filled with laughter and the satisfaction of creating something unexpected. There's something about those summer nights that just calls for lighter meals. This grilled shrimp salad fits that bill perfectly.

You know those days when the sun hangs in the sky a bit longer, and everyone lingers outside, not quite ready to head indoors? That's when this salad really shines. It's quick to assemble, freeing up more time to enjoy the fresh air and the company. Plus, it’s hearty enough to serve as a main course but won't weigh you down like a heavy steak dinner might. It’s just right for picnics or casual gatherings, allowing the fresh ingredients to shine without much fuss.

I often make it for family get-togethers during the warmer months. There's something special about its simplicity that brings everyone to the table. Now, let's talk about the flavors. This salad is a celebration of contrasts that work beautifully together. The shrimp, when grilled, become slightly smoky and sweet, which pairs beautifully with the fresh cilantro vinaigrette.

This dressing, with its lime juice and Dijon mustard base, has a tangy kick that awakens the taste buds. The cilantro adds a brightness that feels like a little bit of sunshine in every bite. There's also a bit of sugar in the dressing which balances out the acidity, making it more rounded. It's a symphony of flavors that dance around your palate, with every ingredient playing its part. Textures are just as important as flavors in this dish.

The shrimp are succulent and juicy, while the bell peppers add a refreshing crunch. I like to use both red and green bell peppers for a bit of color contrast, but their different sweetness levels also add depth to each forkful. The red onion offers a sharp bite, which I find necessary to cut through the richness of the olive oil in the vinaigrette. So, there's a bit of everything in here, from the softness of the shrimp to the crispness of the vegetables. It really turns what could be a simple salad into something special.

If you’re planning to make this dish, here are a few tips to keep in mind. First, when grilling shrimp, be cautious not to overcook them. Shrimp cook fast, in just a few minutes, and keeping a close eye will ensure they stay tender and juicy. Also, make sure the shrimp is dry before you put it on the grill. Pat it with a paper towel to absorb any moisture, which helps achieve that perfect sear.

For the dressing, emulsify it well. This just means you'll need to whisk it until the oil and lime juice come together to create a smooth, well-blended dressing. Lastly, when cutting the onions and peppers, try to keep the pieces uniform. It ensures even cooking and makes the salad feel more cohesive when you’re eating it. You might be curious about the origins of this type of salad.

Shrimp itself has long been a staple in American cooking, especially in coastal areas where it's readily available. The idea of pairing it with fresh vegetables is more modern, reflecting a move towards healthier eating that doesn't sacrifice taste. This type of dish showcases how versatile shrimp can be, easily transforming from a snack to a main attraction in a meal. Grilled shrimp salads have become popular for their straightforwardness and adaptability, embraced in various forms across the country. Whether you're drawing from Southern influences or adding your own twist, it remains a beloved choice for many who value both flavor and health.

So, there you have it, a simple yet delightful dish that has become a go-to in my household. From its accidental discovery in my kitchen to becoming a staple at my summer gatherings, the grilled shrimp salad is always welcomed with enthusiasm. It's amazing how a few key ingredients can come together to create something that feels both familiar and exciting. When you take that first bite, I hope it brings as much joy and connection to your table as it has to mine.

Method

  1. Step 1: Preheat your grill to medium-high heat. If you are using gas, turn your burners on medium-high and allow to preheat. If you are using charcoal, prepare for direct heat grilling.

  2. Step 2: In a glass jar with a lid, combine the lime juice, minced cilantro, mustard, sugar, olive oil, and a pinch of salt and black pepper. Add the lid and shake well to combine all of the ingredients. Set aside. The vinaigrette can be made in advance and stored in the fridge. It’s best served at room temperature. If you have leftover dressing, it will keep fine in the fridge for a week.

  3. Step 3: Drizzle the peppers and onions with olive oil. Season with a pinch of salt and pepper and using tongs add to your preheated grill. Grill the vegetables for 4-5 minutes per side until they are well charred and tender. Using tongs, remove from the grill and let cool. Roughly chop the vegetables for the salad.

  4. Step 4: In a large bowl, add the shrimp. Drizzle with olive oil and season with chili powder, garlic powder, salt, and pepper. Then skewer the shrimp, dividing them between 4 skewers. If you use wooden/bamboo skewers, make sure to soak them well so they don’t burn completely on the grill.

  5. Step 5: Add shrimp skewers to grill (I recommend lightly oiling grill to prevent sticking) and grill for 2-3 minutes per side. The shrimp are done when they are pink and no longer translucent in the center. Remove shrimp from grill and serve them as soon as possible.

  6. Step 6: Add the romaine lettuce into a large serving plate or bowl and drizzle with a tablespoon or two of the vinaigrette. Top with chopped, grilled vegetables, grilled shrimp, sweet corn, avocado, cherry tomatoes, scallions, and crumbled Cotija cheese. Serve.

  7. Step 7: Leftover salad ingredients are best stored separately and without dressing. Shrimp will keep in the fridge for 2-3 days. If you do have salad that is dressed, it will keep okay for 1 day in the fridge, but the texture will change. Did you love this recipe? Give us some stars below!
