Beef strips with yellow pepper, tomatoes and black olives on a white plate with a fork

This is a quick Mediterranean-style stew rather than a slow braise. Thin strips of steak cook through in about ten minutes in a tomato sauce with sweet pepper, rosemary and olives, so dinner is ready in under half an hour.

Because the beef only simmers briefly, the cut matters. Use a tender steak such as sirloin, rump or flank, sliced thinly across the grain. Stewing cuts like chuck need hours, and they'd stay chewy here.

Browning the beef quickly in a hot pan before it goes into the sauce adds flavour, and lifting it out again stops it overcooking while the sauce reduces. The olives go in at the end so they keep their texture and salty bite. A spoonful of their brine perks up the sauce if it tastes flat.

It's lean and filling, with plenty of vegetables. Serve it over mashed potatoes, soft polenta or rice, or with bread to soak up the sauce. It also doubles easily for a crowd.

Method

  1. Step 1: Season the beef with 1/4 teaspoon of the salt and the pepper. Heat 1 tablespoon of the oil in a large skillet over high heat. Add the beef in a single layer and sear for 1 minute per side, until browned but still pink inside. Transfer to a plate.

Tip: Sear in two batches if your pan is small, or the beef will steam.

  2. Step 2: Lower the heat to medium and add the remaining oil, the onion and the garlic. Cook, stirring, until soft and turning golden, about 5 minutes.

  3. Step 3: Add the yellow pepper and cook for 2 minutes. Stir in the tomatoes, water or stock, rosemary and the remaining salt. Bring to a simmer and cook for 10 minutes, until the pepper is tender and the sauce has thickened slightly.

  4. Step 4: Return the beef and any juices to the pan with the olives. Simmer for 2 to 3 minutes, just until the beef is hot and cooked to your liking. Taste for salt and scatter with parsley before serving.

Tips

  • Partly freezing the steak for 20 minutes makes it much easier to slice thinly.
  • Add a splash of red wine with the tomatoes for a richer sauce.

Variations

  • Swap the beef for sliced chicken thighs and simmer them in the sauce for 8 to 10 minutes until cooked through.
  • Add a drained can of cannellini beans with the tomatoes to stretch it to six servings.

Storage and make-ahead

Keeps in the fridge for up to 3 days. Reheat gently so the beef doesn't toughen. Freezes for up to 2 months.
