Vegetarian chili with kidney beans, carrots, peppers and corn in a white bowl with a spoon

This is a simple, vegetable-heavy chili that comes together in one pot in about 45 minutes. Mushrooms give it a meaty texture and savoury flavour, while carrots, peppers and corn add sweetness and colour.

To get the most from the mushrooms, let them cook until their liquid has evaporated and they start to brown before adding the tomatoes. Simmered while still wet, they turn rubbery and add little flavour.

The spices go in early, with the vegetables, so they cook in the oil rather than sitting raw in the sauce. Cumin and chili powder give it a classic chili flavour, and oregano adds an earthy note. The original recipe used basil as well, which tasted out of place, so this version swaps it for smoked paprika.

Drain and rinse the beans and corn. The canning liquid makes the chili taste tinny and salty. Serve with rice, tortilla chips or baked potatoes, and top with cheese, sour cream or avocado.

Ingredients

Method

  1. Step 1: Heat the oil in a large pot over medium heat. Add the onion, carrots and celery and cook, stirring occasionally, until softened, about 7 minutes.

  2. Step 2: Add the peppers and garlic and cook for 4 minutes. Stir in the chili powder, cumin, oregano, smoked paprika and salt and cook for 1 minute, until fragrant.

  3. Step 3: Add the mushrooms and turn the heat to medium-high. Cook, stirring, until they release their liquid and it evaporates, about 6 minutes.

  4. Step 4: Stir in the tomatoes, stock, beans and corn and bring to a boil. Lower the heat and simmer partly covered for 25 minutes, stirring now and then, until thickened.

  5. Step 5: Stir in the lime juice, taste and adjust the salt and spice, then serve.

Tips

  • For extra depth, stir in a teaspoon of cocoa powder or a square of dark chocolate with the tomatoes.
  • Mash some of the beans against the side of the pot for a thicker chili.

Variations

  • Add a diced sweet potato with the carrots and an extra 1/2 cup of stock for a heartier pot.
  • Swap one can of kidney beans for black beans or pinto beans.

Storage and make-ahead
