The first time I whipped up a salmon and broccoli pasta dish, it was a chilly autumn evening at my sister Karen's place. Karen has always been the one in our family to bring people together over food. She's got this knack for turning everyday ingredients into something special, a gift she must have inherited from our grandmother, who was Italian through and through. I remember the kitchen filled with the sound of her favorite jazz records playing softly in the background, as the smell of roasting vegetables mingled with the slightly salty breeze drifting through the open windows. We were bustling around, catching up on life while simultaneously dodging the kids who were racing toy cars across the kitchen floor.

That night, the pasta dish emerged as a sort of heartwarming centerpiece, drawing everyone into the kitchen with its inviting aroma. Karen had this big, old, well-loved wooden spoon she used for everything. As she stirred the cream sauce, she would tell jokes, her laughter mingling with the sound of pasta boiling away cheerfully on the stove. It was a simple dish, yes, but it was the way she put it all together that made it magic. There was a particular moment when the mascarpone melted into the sauce, turning it into a gorgeous, velvety concoction, that I realized why this dish held such a special place in her heart.

She said it reminded her of the times we spent with our grandmother, learning how to cook and gathering around the family table with so much excitement. It was more than just food. It was a connection, a link to our past and a way to make new memories. This pasta dish is ideal for the colder months when you crave something warm and comforting. It makes an appearance frequently at our family gatherings in the fall and winter.

There's something about the combination of salmon, broccoli, and creamy pasta that just fits the season. When the air gets nippy and the leaves start turning, I find myself automatically reaching for ingredients that create this dish. It's hearty without being heavy, a satisfying meal after a long day when you're looking to unwind and indulge a little. Plus, it makes the house smell wonderful as it bakes, which is a bonus when you're expecting company. The flavors in this dish are a testament to why simple ingredients are usually the best.

The salmon, with its rich and slightly oily flesh, pairs beautifully with the earthy, slightly bitter broccoli. The mascarpone lends the dish its creamy, luxurious texture, melding those two main ingredients together seamlessly. Sundried tomatoes add a burst of concentrated sweetness, balancing out the robustness of the salmon and bringing a little sunshine to the dish, even on the darkest days. Capers, if you decide to include them, add a briny pop that cuts through the creaminess, offering a delightful contrast in both flavor and texture. What makes this pasta dish stand out is not just the taste, but the way it all comes together in harmony.

The butter and flour create the roux, a foundational step that thickens the sauce perfectly. As you gradually whisk in the milk, the sauce transforms, becoming smooth and glossy. This is where patience is key. Letting it slowly thicken ensures the mascarpone melts evenly, giving the sauce a luscious, silky quality. Adding the pasta and broccoli at just the right time is another crucial step.

The broccoli should still have a bit of crunch to it, providing a nice contrast to the tender pasta and flaky salmon. Speaking of cooking tips, here are a few that might help. First, when cooking pasta, make sure the water is at a rolling boil before you add the penne.

Adding a generous pinch of salt will season the pasta as it cooks, enhancing the overall flavor of the dish. When preparing the broccoli, cutting it into similarly sized florets ensures even cooking. If you're using sundried tomatoes preserved in oil, give them a light pat with paper towels to remove excess oil, ensuring they don't make the dish greasy. Lastly, while baking, if you notice the top browning too quickly, you can cover the dish loosely with foil. These small adjustments can make a big difference.

Salmon and broccoli pasta has roots in Italian cuisine, a testament to its simplicity and focus on fresh ingredients. Italians have a long history of making pasta dishes that are not only easy to prepare but also incredibly flavorful. Particularly in regions near the coast, fish and seafood are staple ingredients, often paired with vegetables and creamy sauces. This dish embodies that spirit, using everyday ingredients like pasta and broccoli to create something that's more than the sum of its parts.

It's a dish that fits into the Italian tradition of gathering around the table, sharing stories, and enjoying food that nourishes both body and soul. In my family, this salmon and broccoli pasta has become more than just a meal. It's a way to bring a little bit of Italy into our homes, especially for those cold nights when the family gathers for a shared meal. Every time I make it, I'm reminded of those evenings spent at Karen's, enveloped by warmth, laughter, and the comforting smells of a busy kitchen. It's these moments that make cooking such a joyous experience.

They're memories wrapped up in the aroma of a favorite dish, creating a bond that bridges generations and keeps us coming back to the table time and again.

  1. Step 1: Preheat the oven to 190C/gas 5/fan 170C and get out an ovenproof dish (measuring 20 by 10 inch, and about 2 inch deep). Meanwhile, put a large pan of water on to boil for the pasta. When it is boiling rapidly, tip in the pasta with a generous sprinkling of salt. Give it a stir, return to the boil and cook for 6 minutes. Add the broccoli, Then return the water to the boil and cook for 4 minutes more, until the broccoli is on the firm side of just tender. Drain well.

  2. Step 2: While the pasta is cooking, put the butter, flour and milk in a large pan and heat, whisking or stirring continuously, until it thickens to make a smooth sauce. Remove from the heat and stir in the mascarpone, sun-dried tomatoes, capers (if using), anchovies (if using) and basil, Then add the pasta and broccoli and season well.

  3. Step 3: Halve the salmon fillets widthways (you will see that there is an obvious divide on each fillet) Then place the pieces in a single layer on the base of the ovenproof dish. Spoon the broccoli mixture on top, Then scatter with the grated cheddar. (You can chill this for up to 4 hours if you want to get ahead.).

  4. Step 4: Bake for 30 minutes until the mixture is just starting to bubble round the edges and the mixture is pale golden – don’t let it go too dark or the fish will overcook.
