Sitting at the old wooden table in my kitchen, the aroma of sizzling shrimp and polenta fills the air. It takes me back to a summer evening a few years ago at my friend Linda’s house. We were celebrating her birthday, and she wanted to make something special yet uncomplicated. Her laughter was infectious as she moved around her kitchen, effortlessly prepping ingredients while we chatted. The kitchen was the heart of the gathering, and as the sun began to set, casting a golden hue through the open windows, Linda served up a dish that was both simple and unexpectedly delightful: salt-and-pepper shrimp with crispy polenta.

I remember how everyone gathered around, reaching for seconds and thirds, the conversation flowing as we shared in the joy of good food and good company. That evening at Linda’s was one of those times when you realize that food is more than just sustenance. It's a way to bring people together, to create memories, and to anchor us to moments in time. Linda’s dish stayed with me, not just because it tasted great, but because it was such a perfect complement to the easy, relaxed vibe of the evening. The combination of the shrimp and polenta, a dish I’d never really considered before, seemed to perfectly capture the essence of summer: fresh, light, and deliciously satisfying.

Every time I make this dish now, it’s like inviting a piece of that memory into my home, even if it’s just a regular Tuesday night dinner with the family. Speaking of which, this dish feels like it’s made for those transitional seasons, like late summer or early fall, when the days start to get shorter but you’re still clinging to the warmth and light. It’s also a great choice for a casual dinner party. Not the kind that requires hours of prep and leaves you frazzled and wondering why you ever thought hosting was a good idea, but the kind where you can actually enjoy your guests’ company. It pairs well with a crisp white wine or even a light beer, and it really shines as a centerpiece at an informal gathering where everyone is relaxed and ready to enjoy what you’ve whipped up.

Now, let's talk about the magic behind these seemingly simple ingredients. The shrimp, with their natural sweetness, get a delightful kick from the freshly ground black pepper and the Sichuan peppercorns. These peppercorns add a hint of numbing heat that complements the shrimp beautifully, creating a symphony of flavors that dance on your tongue. The sugar balances out the pepper's heat, adding just the right touch of sweetness without overwhelming the other flavors. Then there’s the kosher sea salt, enhancing the natural flavors of each component without overpowering them.

It's a harmonious blend that elevates the shrimp to something memorable. Paired with crispy polenta cubes, this dish almost feels like a textural celebration. The polenta, cut into bite-sized cubes and crisped to perfection, provides a satisfying crunch that contrasts with the tender, juicy shrimp. Using the pre-cooked polenta from those handy tubes makes this dish accessible, even for those who might shy away from making polenta from scratch. The outer layer of the polenta becomes golden and crispy when cooked in a bit of vegetable oil, while the inside remains soft and creamy.

This combination of textures is what makes the dish so engaging and keeps people coming back for more. Now, a few practical tips to make your cooking experience smoother. First, when working with shrimp, make sure they’re patted dry before dusting them with cornstarch.

This ensures that they crisp up nicely when you cook them. Second, keep an eye on the oil temperature when frying the polenta. If it’s too hot, the outsides will burn before the insides have a chance to heat through. You want a medium-high heat here, allowing the polenta to achieve that golden crust without cooking too fast. Finally, don’t be afraid to adjust the seasoning to your taste.

Everyone’s palate is a bit different, and part of the joy of cooking is tailoring dishes to suit your preferences. The origins of this dish are rooted in the idea of combining familiar ingredients in an unexpected way. It’s a nod to the traditional Chinese salt-and-pepper technique, a beloved approach that highlights the main ingredient's natural flavors through a simple yet effective seasoning blend. People gravitate towards this kind of dish because it’s unfussy and approachable, yet it delivers on taste in a big way. In many cultures, dishes like this are a testament to the idea that you don’t need a long list of fancy ingredients to create something special.

It’s about using what you have, and making it shine. In my home, dishes like salt-and-pepper shrimp with crispy polenta serve as a reminder of how food can transform an ordinary evening into something significant. It’s the kind of meal that doesn’t just fill you up, but leaves you feeling satisfied on a deeper level. Whether it’s for a casual dinner with family or a gathering with friends, it’s a dish that fosters connection and conversation, much like it did that memorable evening at Linda’s.

Method

  1. Step 1: Mix 2¼ tsp. freshly ground pepper, 2¼ tsp. ground Sichuan peppercorns, 1½ tsp. sugar, and 1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt in a small bowl to combine; set spice mixture aside.

  2. Step 2: Toss 1 lb. medium shrimp, peeled, deveined, tails left on, and ⅓ cup cornstarch in a large bowl until shrimp are evenly coated. Set aside.

  3. Step 3: Heat ⅓ cup vegetable oil in a large nonstick skillet over medium-high. Working in batches and adding more oil as needed if pan looks dry, cook one 16–18-oz. tube precooked polenta, cut into 1" cubes, in a single layer, turning halfway through, until golden and crisp, 10–14 minutes per batch. (Be patient; the polenta takes a long time to crisp up. Don’t fuss with it too much.) Transfer polenta to a large bowl.

  4. Step 4: Working in batches and adding more oil as needed if pan looks dry, cook reserved shrimp in a single layer in same pan, turning halfway through, until golden brown and crisp, about 2 minutes per batch. Transfer to bowl with polenta.

  5. Step 5: Add 5 Fresno chiles, thinly sliced, to same pan and cook, stirring often, just until tender, about 1 minute. Transfer to bowl with polenta and shrimp.

  6. Step 6: Add 1 bunch scallions, cut into 2" pieces, white pieces halved if thick, to same pan and cook, stirring often, just until tender, about 1 minute. Transfer to bowl with polenta, shrimp, and chiles and sprinkle reserved spice mixture over. Toss until combined and everything is evenly coated. Taste and season with more salt if needed.
