Growing up, our family dinners weren't complete without something green on our plates. My mom, always the creative cook, would often experiment with different vegetables to keep things interesting. One of my favorite memories is of her trying out a new pasta dish that featured broccoli as the star. I remember the kitchen filled with the warmth and aroma of garlic sizzling in olive oil. The scent was so inviting that my brother and I would find our way to the kitchen, curious about what was cooking.

Mom would shoo us away, saying it was a surprise. When dinner was finally served, we were greeted with a vibrant bowl of pasta mixed with rich green broccoli, lemon zest, and a sprinkle of Parmesan. This dish was more than just pasta; it was an experience, and every bite reminded me of my mom's unwavering love for simple yet flavorful meals.

I carried that memory into my own kitchen, especially when life got busy. This dish became my go-to for weeknights when I wanted something comforting yet uncomplicated. It's amazing how certain foods can bring a sense of calm and nostalgia, almost like a warm hug on a hectic day. It’s perfect in the fall when the air starts to get crisp, and you're craving something hearty but not too heavy. It’s a dish that fills not just the stomach but also the heart, making it a favorite for family dinners or even quiet nights in when you just want to unwind with a glass of wine and good company.

The combination of ingredients here is what makes the dish stand out. Broccoli, in all its glory, is not just about nutrition; it's about that tender-crisp texture when cooked just right. When you smash it, those little bits cling to the pasta, creating a sauce-like consistency that's both rustic and delightful. The lemon adds a hint of brightness, cutting through the richness of the anchovies and olive oil. As for the anchovies, don't let their reputation for being too fishy throw you off.

They melt into the oil, offering a savory depth that you wouldn't want to miss. It's a symphony of flavors, each playing its part to create a dish that's both hearty and refreshing. What's crucial here is getting the garlic just right. Thinly sliced garlic that's gently cooked in olive oil until it's golden can transform the entire dish. It imparts a subtle sweetness and a nutty aroma that pairs perfectly with the other ingredients.

The crushed red pepper flakes provide a gentle heat, not enough to overpower but just enough to keep things interesting. And let's not forget the pasta itself. Short shapes like mezze rigatoni or cavatappi are ideal as they catch all those flavors and bits of broccoli, ensuring each bite is packed with taste and texture. Now, here are a few tips I've picked up along the way. First, when you boil the broccoli, don't overdo it.

You want it tender but still vibrant in color, which usually takes just about three to four minutes. As you cook the garlic, keep the heat low, so it doesn't burn. Burnt garlic can be bitter, and we definitely don't want that. Another trick is to reserve a cup of pasta water before draining. This starchy water can be a lifesaver if the pasta feels a bit dry or if you want to blend everything together more smoothly.

Finally, when adding the lemon, start with half and taste as you go. You can always add more, but you can't take it back if it becomes too tangy. The origins of this dish are deeply rooted in Italian cuisine, known for celebrating vegetables in the best way possible. Italians have a knack for taking simple, humble ingredients and turning them into something special. Pasta and broccoli dishes are common in many Italian households, not just because they are budget-friendly, but because they're incredibly satisfying.

It's a dish that speaks to the Italian philosophy of using fresh, quality ingredients to create meals that are both nourishing and full of flavor. This pasta is more than just a meal; it's a connection to a way of life that values simplicity and community. Sharing a dish like this is about more than just eating; it's about bringing people together, sharing stories, and creating new memories around the dinner table. In a world that often feels rushed and complex, sitting down to a plate of smashed broccoli pasta can be a reminder to slow down and enjoy the simple, beautiful things in life. Every time I prepare it, I feel a part of that larger story, continuing a tradition that’s been passed down through generations.

Method

  1. Step 1: Trim bottom 1" from stem of 1 large head of broccoli (1–1¼ lb.); discard. Peel tough outer layer from stem as needed; discard. Finely chop stem; cut broccoli head into 1" florets.

  2. Step 2: Using a Microplane, finely grate zest from ½ lemon into a small bowl and cover with a damp paper towel. Slice lemon into thick rounds and remove seeds; discard. Very finely chop lemon rounds (peel, pith, and flesh); set aside.

  3. Step 3: Cook broccoli stem in a large pot of boiling salted water, about 3 minutes. Add broccoli florets and cook until deep green and very tender, about 5 minutes. Using a spider or slotted spoon, transfer broccoli to a colander; reserve pot of water.

  4. Step 4: Return water to a boil. Add 12 oz. short pasta (such as mezze rigatoni or cavatappi) and cook until very al dente, about 2 minutes less than package directions. Drain, reserving 2 cups pasta cooking liquid.

  5. Step 5: Cook 8 oil-packed anchovy fillets, 0 ozarlic cloves, thinly sliced, and ⅓ cup extra-virgin olive oil in a medium Dutch oven or other heavy pot over medium, swirling pan occasionally, until garlic is light golden and anchovies have dissolved, about 3 minutes. Stir in ½ tsp. crushed red pepper flakes and reserved chopped lemon, season with freshly ground black pepper, and cook 1 minute.

  6. Step 6: Remove from heat and add broccoli to pot. Using a wooden spoon or a firm heatproof rubber spatula, smash broccoli into very small pieces. Add pasta, 1 cup pasta cooking liquid, and ¾ cup finely grated Parmesan and toss aggressively, adding more pasta cooking liquid as needed to loosen, until pasta is coated in sauce. Season with kosher salt.

  7. Step 7: Divide pasta among shallow bowls. Drizzle with more oil and top with reserved lemon zest and more red pepper flakes and remaining ¼ cup finely grated Parmesan.
