Salad of peeled prawns, diced mango, avocado, red onion and coriander on a white plate

This is a salad built for the first properly warm weekend of the year, when mangoes start turning up cheap and you don't want the oven or the stove going. Everything is either cooked already (the prawns) or needs no cooking at all, so the whole thing comes together on the bench in under half an hour.

The mango needs to be ripe but still holding its shape, not so soft it turns to mush when you cut it. Press the skin gently near the stem; it should give slightly. A just-ripe mango and a ripe-but-firm avocado give you two different kinds of sweetness and creaminess in the same bowl.

Buy prawns already cooked and peeled to keep this quick, or cook raw ones yourself in salted boiling water for 2-3 minutes if you want them warm through the salad. Either way, don't dress the salad until just before serving. The lime juice starts to soften the avocado and mango if it sits too long, and the whole thing loses its crunch.

This works as a light lunch on its own with some crusty bread, or as a side for something off the barbecue. It doesn't keep well made up, so treat it as a last-minute job rather than something to prep hours ahead.

Salad

Lime dressing

Method

  1. Step 1: Whisk the lime juice, fish sauce, sugar, olive oil and garlic together in a small bowl or jar until the sugar dissolves. Taste and adjust: it should be sharp, a little salty and a little sweet.

  2. Step 2: Soak the sliced red onion in a bowl of cold water for 5 minutes, then drain well. This takes the harsh bite out of it.

Tip: Skip this step if you like a stronger onion flavour, but it's worth doing if you're serving the salad to a crowd.

  3. Step 3: Arrange the spinach or salad leaves over a platter or in a large shallow bowl. Scatter over the mango, avocado, onion and prawns.

  4. Step 4: Spoon the dressing over the top, scatter with chilli and coriander, and serve straight away.

Tips

  • If your mango is very ripe and soft, cut it over a bowl to catch the juice and add that to the dressing instead of wasting it.
  • Pat the prawns dry with paper towel before adding them. Wet prawns water down the dressing.
  • A pinch of sugar in the dressing isn't about making it sweet, it balances the fish sauce and lime so neither one dominates.

Variations

  • No fish sauce: use 2 tbsp light soy sauce and a squeeze more lime instead.
  • Make it a main: add a cup of cooked rice noodles or shredded cos lettuce to bulk it out for a bigger lunch.
  • Swap the prawns for shredded barbecue chicken or chargrilled halloumi for a vegetarian version.

Storage and make-ahead

Best eaten straight away. If you need to prep ahead, cut the mango and avocado and keep them separately covered in the fridge for up to a few hours, and make the dressing ahead too, but don't combine everything until just before serving.
