Watermelon, cucumber and feta salad with red onion and coriander in a white bowl

This is a salad built for feeding a crowd, which is why the quantities below run big: it's the kind of thing you make for a barbecue or a race day spread rather than a quiet dinner for two. Watermelon's sweetness against salty feta is the whole idea, with cucumber and quick-pickled onion keeping it from feeling one-note.

Soaking the sliced red onion in lime juice for a few minutes does two things: it takes the raw, sharp edge off the onion, and the leftover lime juice becomes the base of the dressing once everything else goes in. There's no need for a separate dressing step.

Cut the watermelon into pieces roughly the same size as the cucumber, so you get a bit of both in each mouthful rather than one dominating. A sharp knife matters more than usual here, crushed or torn watermelon releases extra juice and waters down the salad in the bowl.

Assemble this close to serving if you can. Watermelon keeps releasing liquid as it sits, salted or not, so a salad made more than an hour or two ahead ends up sitting in a pool of its own juice by the time you serve it.

Method

  1. Step 1: Put the red onion in a small bowl and pour over the lime juice. Leave to sit while you prepare the rest of the salad, at least 10 minutes.

  2. Step 2: Gently combine the watermelon, cucumber, feta and coriander in a large bowl. Season with cracked black pepper.

  3. Step 3: Toss the salad with the onion and its lime juice, season with sea salt to taste, and serve straight away.

Tips

  • Press a paper towel over the cut watermelon flesh before cubing it if it feels especially wet, it keeps the salad from turning soupy as fast.
  • Buy the feta as a block and crumble it yourself rather than using a pre-crumbled tub, it holds its shape better in the salad instead of turning mealy.

Variations

  • Smaller batch: halve all the quantities for a side salad of about 7-8 serves.
  • Add some crunch: toasted pepitas or slivered almonds scattered over the top work well against the soft watermelon.
  • Swap the herb: mint instead of coriander gives a cooler, more classic pairing with the watermelon and feta.

Storage and make-ahead

Best made close to serving and eaten the same day, it doesn't keep well once assembled as the watermelon releases liquid on standing. The onion can be pickled in lime juice up to a day ahead and kept in the fridge.
