Three squares of zucchini slice with bacon and cheese on a white plate with a knife

Zucchini slice is a lunchbox staple for a reason: it holds together well enough to eat cold with your hands, it reheats without drying out, and it uses up the zucchini glut that starts hitting the shops and home gardens from around now through summer.

The one step that actually matters here is squeezing the water out of the grated zucchini. Skip it and the slice turns soggy in the middle no matter how long you bake it, because zucchini is mostly water and that water has to go somewhere. A clean tea towel twisted tightly around the grated zucchini gets most of it out in one go.

Self-raising flour is what gives this its slightly cakey, firm texture rather than a wet frittata-like one. If you've only got plain flour, mix in 2 teaspoons of baking powder per cup to make your own.

This version uses bacon, but it's easy to make vegetarian by leaving it out and adding a bit more cheese or some chopped sun-dried tomato for flavour. Either way, let it cool for at least 10 minutes before cutting so the slices hold their shape instead of falling apart.

Method

  1. Step 1: Preheat the oven to 180°C (160°C fan-forced). Grease a 20cm x 30cm slice or lamington tin and line the base with baking paper.

  2. Step 2: Toss the grated zucchini with the salt in a colander and leave to sit for 10 minutes. Twist handfuls in a clean tea towel to squeeze out as much liquid as you can.

Tip: You'll get out more liquid than seems possible. Don't skip this step or the slice won't set properly.

  3. Step 3: Cook the bacon and onion in a frying pan over medium heat for 5-6 minutes, until the onion is soft and the bacon is starting to colour. Set aside to cool slightly.

  4. Step 4: Put the zucchini, bacon and onion, flour, eggs, oil, tasty cheese and parmesan in a large bowl. Season with pepper and mix well to combine into a thick batter.

  5. Step 5: Pour into the prepared tin and spread evenly. Bake for 35-40 minutes, until golden on top and a skewer inserted into the centre comes out clean.

  6. Step 6: Rest in the tin for 10 minutes before lifting out and slicing into squares.

Tips

  • Grate the zucchini on the coarse side of a box grater. Fine shreds release more liquid and can turn the slice mushy even after squeezing.
  • If the top is browning too fast but the centre's still wet, cover loosely with foil for the last 10 minutes of baking.
  • Cut it into smaller squares than you think you need. It's rich enough that a 4cm square is a reasonable lunchbox serve.

Variations

  • Vegetarian: leave out the bacon and add an extra 1/2 cup of grated cheese, plus a handful of chopped sun-dried tomato or corn kernels.
  • Gluten-free: use a gluten-free self-raising flour blend in place of the wheat version, results are slightly denser but still work.
  • Add vegetables: grated carrot or finely chopped capsicum can go in alongside the zucchini, just squeeze out any extra moisture first.

Storage and make-ahead

Keeps in an airtight container in the fridge for up to 4 days. Good cold or reheated in the microwave. Individual squares freeze well for up to 2 months, wrapped separately, and defrost in the fridge overnight.
